Garden Veggie Couscous Recipe
Ingredients:
- 1 cup uncooked RiceSelect Pearl Couscous
- 3 tablespoons olive oil
- 1 clove of garlic, minced
- 1/2 yellow pepper
- 1/4 cup onions, finely chopped
- 1 cup cherry tomatoes, halved
- 1 cup fresh basil, chopped
- 1/4 cup Parmesan cheese
- 1 teaspoon balsamic vinegar
- salt and pepper, to taste
Directions:
- Prepare pearl couscous according to package directions
- While pearl couscous Is cooking, heat olive oil in skillet, add garlic, pepper and onion; sauté until tender
- In a serving bowl, combine tomatoes, basil, balsamic vinegar and Parmesan cheese; stir in cooked pearl couscous
- Once vegetables are sautéed, add them into the mixture
- Salt and pepper to taste, and sprinkle with additional Parmesan cheese, if desired; serve warm

Instructions: Cooking Pearl Couscous: 1-1/2 cups water; 1/2 tsp salt (optional); 1 tsp butter or olive oil (optional); 1 cup pearl couscous. Bring water to a boil. Add salt and butter or olive oil, if desired. Stir in pearl coucous. Cover with lid; reduce heat to low and simmer 8-10 minutes, stirring occasionally. Yield approximately 2 cups.
